This weekend was one of those you just don’t want to end. Friday night, we got together with some friends and watched a water polo game that my boss coaches. Saturday and Sunday we caught up on a few things around the apartment, fixed our car, and relaxed with our books and took long naps. We’ve been keeping busy lately and this slow weekend was good for the soul. Instead of bringing your our weekend highlights this morning(which I basically just described), instead I have for you this tasty snack. It’s super easy and quite a crowd pleaser.
4 ounces of saltine crackers (or one sleeve)
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
3/4 cup chopped pecans
Preheat oven to 400 degrees. Line cookie sheet with saltine crackers in a single layer. In a saucepan combine the sugar and butter and bring to a boil for 3 minutes. Immediately pour over saltines and spread to cover quickly. Bake at 400 degrees for 5 to 6 minutes (do not overcook). Remove from the oven and sprinkle chocolate chips over crackers. Let sit for 5 minutes or so. When chocolate is warm, spread to cover and then top with chopped pecans. Let cool completely and break into pieces.
