This week has been a crazy one. I should’ve known it would be when I didn’t arrive in California until the wee hours of the morning on Monday and then jumped right back into work. Andrew flew right from Buffalo to Florida for work, so I have been on my own this past week. Well actually, not completely alone…I learned that our Christmas tree had been infested with bugs (Giant Conifer Aphids, to be exact) and I have been squashing and vacuuming all week. I’m sure the neighbors are glad to have me back.
I had hoped to update you all with pictures from our Christmas vacation and new memories that we made with our families, but that’ll have to wait. Until then, I will leave you with this tasty green salad.
While I am not a salad person, I was recently asked to bring a salad to a BBQ and this is what I brought…and I liked it so much that I’ve been making it frequently ever since.
crumbled feta cheese
grilled chicken (optional)
raspberry vinagerette dressing
Mix together ingredients (its easy to leave the strawberries and/or the chicken, but the walnuts and feta cheese are key for me). Enjoy on a warm summer day or paired with a sweet red wine…or both!
